  • 1 tablespoon olive oil
  • 1 onion (chopped)
  • 2 cloves garlic (crushed)
  • 14 ounces crushed tomatoes
  • 1/2 cup white wine (or fish stock)
  • 1 tablespoon chili sauce
  • 8 ounces shrimp (peeled, deveined, tails on)
  • 1 cup cubed fetta
  • 8 green onions (sliced)

    Directions

    1. Heat oil in a large frying pan on medium. Sauté onion and garlic, 1-2 minutes, until tender.
    2. Stir in tomatoes, white wine or stock and chili sauce. Season to taste. Simmer, 2-3 minutes.
    3. Add shrimp, feta and green onions. Simmer for 3 minutes, until shrimp change colur and are tender. Serve with boiled rice and salad, if you like.

    Couldn’t find the directions (I’m new to the app) but the combo of ingredients are pretty yummy! I put it over a bed of lightly sautéed spinach and kale.
