Description
Featuring heirloom tomatoes, this fresh tomato salad is a refreshing vegetarian dish to serve during the hot summer months. This tomato salad is easy to make and not at all labor intensive. All that is required is to toast your own croutons and slice all of the ingredients before tossing in olive oil and seasoning with salt and pepper. Best served immediately after preparation. Omit the croutons or use gluten free bread to make this salad gluten free.

- 1 kg tomatoes (various types of, differing in size and color)
- 1 shallots
- 1 slice bread (homemade, or bloomer loaf)
- black olives
- 1 bunch basil leaves
- extra-virgin olive oil
- ground black pepper (Freshly)
- sea salt

Directions
- With a sharp knife, cut the tomatoes and shallots in very fine slices.
- Make a bunch with the basil leaves and finely cut with scissors. Set aside.
- Dice the bread into croutons of 1 centimeter and toast until golden brown. Set aside.
