Really tasty using a mix of heritage yellow tomatoes and standard red ones. also added some dried fennel seeds and an apple finely diced I used white vinegar for the main mix and apple cider vinegar only for the thicker, cooked this in instantpot pressure cooker for 7minutes before depressurisation then put onto sauté to thicken
