- 2 cups lentils (masoor, washed well, these are little orange lentils)
- 4 cups water
- 1/2 tsp. turmeric powder
- 1/2 inch cinnamon stick (small)
- 4 cups fresh tomatoes (chopped, ripe)
- 1 Tbsp. cumin seeds
- 1/2 Tbsp. mustard seeds
- 15 curry leaves (optional)
- 1 tsp. cumin powder
- red chili flakes (/red chili powder to taste)
- 1 onion (medium, diced)
- 2 green chilies (sliced, I used serranos, you can use jalapenos)
- 3 cloves garlic (finely minced or grated)
- 1 Tbsp. fresh ginger (grated)
- salt (to taste)
- 1/2 cup coconut milk (optional I cooked mine without any milk, it was still creamy.)
