Ingredients

2 SERVINGS
- 4 Tbsp. extra-virgin olive oil
- 4 garlic cloves (minced)
- 2 plum tomatoes (chopped)
- 1 tsp. sugar
- 1 tsp. thyme
- kosher salt (to taste)
- 8 slices baguette (cut diagonally into 1/4 inch)
- peppercorn (to taste)
- 3 parsley leaves (chopped)
- 1 tsp. white wine vinegar

Directions
- In a mixing bowl add chopped tomatoes , vinegar ,sugar ,thyme and parsley .Mix well.Season with salt and pepper.
- Heat 2 tablespoon olive oil in a pan and add garlic.Stir and cook until a little burnt or brown in color. Remove garlic from oil and add another 2 tablespoon of oil in the pan.
- Arrange slices of bread on the pan and toast them till nice golden and crispy.
- Top the toasted bread with the tomato garlic mixture. Serve immediately.
