- 10 Tbsp. unsalted butter (cold, cubed)
- 1 tsp. sugar
- 1 pinch salt
- 3 Tbsp. ice water (as needed)
- 1 lb. small tomatoes (We used Stupice heirloom tomatoes, but cherry tomatoes are good)
- 1/2 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 large egg (beaten)
- 1 tsp. garlic powder
- 1 Tbsp. chili powder
- salt
- pepper
- 1 cup fresh spinach (packed, coarsely chopped + extra for garnish)
- 2 sweet peppers (small, coarsely chopped - I used some Cayenne Buist's from our garden, a bit of heat for me!)
- 1/4 cup shredded Parmesan cheese
- 1/4 cup pecans
- 1 cup olive oil
- salt
- pepper
