  • 1/2 loaf french bread (sliced thinly)
  • 3 tablespoons olive oil
  • 3 tablespoons tomato chutney (or relish)
  • 6 plum tomatoes (small, sliced)
  • dressing
  • 4 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 1/2 ounces mixed greens (to serve)

    Directions

    1. Preheat broiler.
    2. Place crostini on a baking tray and drizzle with olive oil. Broil for 2 mins, until golden and crisp. Flip over and coat with tomato chutney. Arrange tomato slices over top and season. Broil for 2-3 mins, until tomatoes soften and start to caramelize.
    3. Meanwhile, for the dressing, whisk together olive oil and balsamic vinegar. Season.
    4. Arrange mixed greens on 4 serving plates. Top each with 2 bruschetta then drizzle with dressing. Serve.
