- 1 mango (ripe)
- 2 ripe avocados
- 1 pepper (yellow or orange for colour interest)
- 2 Tbsp. chopped green onion
- 1 clove garlic
- 1/4 cup chopped basil
- 1 handful chopped cilantro
- 1 limes (depending on your tastes)
- 2 Tbsp. olive oil (depending on how much lime juice you use)

- 2 1/2 cups corn kernels (cooked, I just used 2 – 19oz cans of whole kernel corn)
- 1 cup flour
- 1/2 cup cornmeal
- 1 tsp. baking powder
- 1/2 tsp. baking soda

- pepper
- 1/4 cup chopped green onion
- 1/4 cup chopped fresh basil
- 2 eggs
- 2 Tbsp. buttermilk
- 2 Tbsp. melted butter
- canola oil (for frying)
