- 1 Tbsp. oil
- 2 shallots (small, shredded)
- 2 garlic cloves (small, crushed)
- 1/2 inch fresh ginger (shredded)
- 5 red chilies (small, sliced)
- 4 cups water
- 1 cube chicken stock (crumbled, I used magi less salt)
- 1 lemon grass (stick, trimmed)
- 8 kaffir lime leaves (fresh, sliced)
- 1 cup shrimps (shelled and deveined, you can leave the tail intact if you like)
- 1 cup rice vermicelli (optional)
- 8 straw mushrooms (canned, or regular mushrooms, I used regular)
- 6 Tbsp. lemon juice
- 5 Tbsp. fish sauce (or soy sauce)
- 2 Tbsp. brown sugar
- 3 cilantro (springs)
