- 1 Tbsp. oil (I use grapeseed oil)
- 2 cups cremini mushrooms (sliced)
- 1 red bell pepper (cut into strips)
- 1 cup sugar snap peas (strings removed)
- 1/3 cup green onions (chopped)
- 3 cloves garlic (chopped small)
- 1/4 cup tamari (Lite, or sodium reduced soy sauce)
- 2 tsp. toasted sesame oil
- 2 Tbsp. maple syrup (or sugar or sweetener of choice)
- 1 tsp. chili pepper and garlic sauce
- 1 Tbsp. rice wine vinegar (unseasoned)
- 3 tsp. fresh ginger (peeled and grated, I use a box grater)
- 1 tsp. cornstarch
- 3 Tbsp. water
