- 1 block extra firm tofu (pressed and sliced into 6 pieces)
- 1 cup apple cider
- 1 Tbsp. apple cider vinegar
- 1 pinch salt (and pepper)
- 4 oz. sharp cheddar cheese
- 1 apple (sliced thin)
- 6 slices sourdough bread (the bread I buy has huge slices so one slice cut in half is about the size of a regular sandwich)
- 2 Tbsp. olive oil mayo (for “buttering the bread, could also use butter or cooking spray)
