It turned out pretty good, I used the “instant pot” instructions with a pressure cooker but I wasn’t sure if that was ok. It would be good to add the information for pressure cooker.
My toddler dug into it!

I have made this recipe over 20 times. I no longer make it for toddlers since they've grown into kids now. I absolutely love this recipe. I sometimes add ground corrander and extra cumin and extra chili. I also add carrot and today I will be adding celery leaves and shallots as well. I always omit the rice only because I'm not a fan of it in general. Once it's ready I top it with old cheddar cheese and green onions (and sometimes sliced fresh basil leaves).

Very tasty. Had to use black beans mixed with dark red kidney and black soy beans bc I didn’t have enough cans of black beans. Added garlic and smoked paprika. Used quinoa instead of rice and just mixed it in as I served it bc I have kiddos who don’t care for it. Even my picky 9 year old ate it. He scooped it up with tortilla chips. Will make again.
