- 1 cup bananas (mashed very ripe, I used 2 medium bananas)
- 1/4 cup honey (raw organic)
- 1/3 cup unsweetened applesauce
- 1 egg
- 1/2 tsp. pure vanilla extract
- 3/4 cup gluten (free oat flour, I make mine by grinding certified gf oats)
- 1/4 cup unsweetened shredded coconut (toasted)
- 1/4 tsp. salt
- 1/4 tsp. baking soda
- 1/4 tsp. baking powder
- 1/2 tsp. cinnamon
- coconut ice cream
- 2 cans full fat coconut milk (the higher the fat the more creamy the ice cream)
- 1/2 cup honey (raw organic, or sugar)
- 1 Tbsp. pure vanilla extract
- 1/2 cup unsweetened shredded coconut (toasted)
- sprinkles
- mini chocolate chips
