- 1 tsp. canola oil
- 1/3 cup carrots (grated)
- 1/3 cup zucchini (grated)
- 1/3 cup scallions (chopped)
- 1 tsp. dried oregano
- 1 tsp. dried dill
- 1 Tbsp. fresh lemon juice
- 1/4 tsp. salt (each, and pepper)
- 16 oz. tilapia fillets

Directions
- Heat oil in small skillet. Cook carrots, zucchini and scallions for 1-2 minutes on medium heat.
- Remove from heat and stir in herbs, lemon juice and salt and pepper.
- Place fish in a single layer over vegetables and seasonings. Cover skillet and cook over medium-high heat for 7-10 minutes or until fillets easily flake with a fork.
