Description
Made with no butter, this Tiger Nut Cake has a rich and robust flavor and the perfect density. Made with a combination of tiger nut flour and regular flour, the cake batter is brought together with the addition of horchata and tiger nut oil. Sprinkle with powdered sugar before serving. Bake time is 30 minutes. Use a dairy free horchata made from a grain or nut milk in order to make this cake dairy free.

- 2 eggs
- 250 grams horchata
- 150 grams nut oil (tiger)
- 350 grams flour
- 50 grams nut flour (tiger)
- 20 grams baking powder

Directions
- Preheat the oven to 180 degrees Celsius.
- Cream the sugar and eggs together. Add the horchata and the oil and beat lightly.
- Sift the flour, tiger nut flour, and baking powder together and add to the liquids. Stir to break up any lumps.
- Pour the batter into a baking pan lined with parchment paper greased with tiger nut oil.
- Bake for approximately 30 minutes. Remove from oven, cool, and sprinkle with powdered sugar before serving.
