- 16 oz. whole milk ricotta cheese
- 1/4 cup Pecorino Romano cheese (plus extra for serving)
- 8 oz. mozzarella cheese (whole milk, shredded and divided, about 2 cups total)
- 1 egg yolk
- 1 tsp. italian seasoning
- 3/4 tsp. kosher salt
- 1/4 tsp. freshly ground black pepper
- 3 Tbsp. basil (chopped, or parsley for serving)
