- 1 onion (chopped)
- 4 cloves garlic (chopped)
- 2 tsp. ground cumin
- 1 tsp. paprika
- 1 tsp. aleppo pepper
- 1 tsp. ancho chili pepper (powder)
- 2 cups vegetable broth
- 2 cups butternut squash (cubed peeled)
- 3 cups chopped tomatoes (two 15-ounce cans, I used fire-roasted tomatoes)
- 1 1/2 cups pinto beans (one 15-ounce can, rinsed and drained)
- 1 1/2 cups cannellini beans (one 15-ounce can, rinsed and drained)
- 1 1/2 cups red kidney beans, rinsed and drained (one 15-ounce can)
- 1 tsp. dried oregano
- 2 tsp. unsweetened cocoa powder
- salt (to taste)
- scallions (thinly sliced, for serving)
