- 1/2 cup canola oil
- 2 cloves garlic (grated on microplane or pressed through a garlic press)
- 1 tsp. sea salt
- ground black pepper
- 8 oz. green beans (cut into 1-inch-long pieces)
- 8 oz. yellow wax beans (cut into 1-inch-long pieces –, subbed garbanzo beans)
- 16 oz. red kidney beans, rinsed and drained
- 1 shallot (medium/large, chopped medium dice –, subbed Vidalia onion)
- 1/4 cup fresh parsley leaves (minced)

Just made this Bean Salad......and I absolutely love it!
I used Garbanzo Beans, Green Beans and Black Beans. Don't care much for the wax beans and the Black Beans are a nice smaller size and have better flavor then the Kidney Beans. Make sure your onions or shallots are sliced very thin. I found a short cut to the dressing: Simply by using a good Italian Dressing and adding the sugar to it. It is quick and easy.....and much more flavorful then just using Vinegar, Oil. and Garlic.
I guess I did modify the recipe quit a bit..... but I got all your ingredient in there ....... I just took the simple route.
