- 1 English cucumber (sliced, about 3/4 cup chopped)
- 1 green bell pepper (or red, diced)
- 1/4 cup red onion (sliced)
- 1/2 cup parsley leaves (loosely packed, chopped)
- 1/2 cup mint leaves (loosely packed, chopped)
- 1/4 cup loosely packed fresh basil leaves (chopped)
- 1/2 cup feta cheese (chunks, optional)
- 1/4 cup capers (optional)
- 3 Tbsp. white wine vinegar (or red)
- 1 1/2 Tbsp. fresh lemon juice (juice of 1 lemon)
- 1 Tbsp. Dijon mustard
- 1/2 tsp. sea salt
- 1/4 tsp. freshly ground black pepper
- 1 tsp. honey (or agave nectar)
- 1/4 tsp. smoked paprika
- 2 Tbsp. diced red onions (finely)
- 1 clove garlic (minced)
