- 3 cups vegetable broth
- 6 oz. tomato paste (can of)
- 1 cup corn kernels
- 2 cloves garlic (minced)
- 1/2 yellow onion (diced)
- 1/2 cup carrots (diced)
- 1/2 cup zucchini (diced)
- 1/2 red bell pepper (diced*)
- 1/2 green bell pepper (diced*)
- 1/2 yellow bell pepper (diced*)
- 1 green chili (large hatch, diced, optional)
- jalapeno (diced, to taste)
- 2 1/2 tsp. chili powder
- 2 1/4 tsp. cumin
- 1 tsp. italian seasoning
- 1 tsp. paprika
- 1/4 tsp. smoked paprika
- 1/4 tsp. black pepper
- 3/4 tsp. salt
- 1 pinch brown sugar (or coconut sugar)
- red pepper flakes (to taste)
- olive oil
- cilantro (Optional toppings:, green onion, red onion, avocado, tortilla chips, sour cream, Greek yogurt, vegan sour cream, cheddar cheese)
