- 2 Tbsp. unsalted butter
- 2 Tbsp. olive oil
- 4 stalks celery (diced or 4 Tbsp dehydrated celery like Penzeys, rehydrated with 4 Tbsp water)
- 1 shallot (small, or 1 Tbps Penzeys dried shallot rehydrated with 1 Tbsp water)
- 1 red pepper (small, diced, 1/4 cup)
- 1 orange (small, /yellow pepper diced, 1/4 cup)
- 1 Tbsp. capers
- 1/4 tsp. Tabasco Sauce
- 1 tsp. Worcestershire sauce
- 1 tsp. Old Bay (or Penzey’s Chesapeake Bay Seasoning)
- 1 tsp. kosher salt
- 1/2 tsp. freshly ground pepper
- 2 cans canned crab (Trader Joe’s, drained and paper removed or 1 package of Trader Joe’s Wild Caught Crab or the equivalent of 8 ounces of crab meat)
- 1/2 cup italian style bread crumbs
- 1/2 cup mayonnaise
- 2 eggs (beaten)
- 2 oz. butter
- 2 Tbsp. olive oil
