- 1 tsp. xanthan gum (omit if your blend already contains it)
- 1/2 tsp. baking soda
- 1/2 tsp. kosher salt
- 1/2 tsp. ground cinnamon
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar (packed)
- 8 Tbsp. unsalted butter (at room temperature)
- 1/2 cup peanut butter (smooth no-stir)
- 1 egg (50 g, weighed out of shell at room temperature, beaten)
- 1 tsp. pure vanilla extract
- 1 apple (large, peeled, cored and finely diced, about 180 g, Granny Smith works best)
