- 1 shortcrust pastry (pack of ready-made, eg JusRol)
- 2 onions (large, I used one red and one white, thinly sliced in rings or half-moons)
- 300 grams sliced mushrooms (thinly, any sort you’ve got in the fridge will be fine)
- 75 grams green beans (or a sliced bell pepper)
- 2 cloves garlic (finely chopped)
- 1/2 cup pastry (melted, for brushing the)
- 1 handful cherry tomatoes (halved)
- 1 block firm tofu (eg Cauldron)
- 1/2 lemon
- 1/2 tsp. turmeric (important for the yellow colour)
- 1/2 tsp. Himalayan black salt (important for that egg smell)
- 1 tsp. Dijon mustard
- 1 tsp. herbs
- 1 handful finely chopped fresh parsley
- 1 Tbsp. vegetable bouillon (or a veg stock cube crumbled up)
- 1 Tbsp. nutritional yeast
- 1 Tbsp. soy sauce
- pepper (to taste, probably about 1/4 teaspoon but it’s your call)
