- 3 lb. chicken wings
- 2 qt. peanut oil (or vegetable oil for frying)
- 3 Tbsp. cornstarch
- 1 tsp. salt
- 1 tsp. cayenne pepper
- 4 Tbsp. unsalted butter (1/2 stick)
- 1/2 cup Louisiana Hot Sauce (such as Frank's Hot Sauce)
- 2 Tbsp. hot sauce (I used Tapatio, because I love it, but use what you prefer)
- 1 Tbsp. dark brown sugar
- 2 tsp. apple cider vinegar
- 2.5 oz. blue cheese (crumbled, about 1/2 cup)
- 3 Tbsp. buttermilk (or you can substitute with whole milk)
- 3 Tbsp. sour cream
- 2 Tbsp. mayonnaise
- 2 tsp. white wine vinegar
- 1/4 tsp. sugar
- 1/8 tsp. garlic powder
- salt
- pepper
