- 1 lb. pork chops (loin or center cut, bone in or boneless, 1 inch thick, cut into 1 inch cubes - 2 chops)
- 1 lb. beef steak (or roast, cut into 1 inch cubes - 2 steaks)
- 15 oz. red kidney beans (2 cans, drained)
- 15 oz. chick peas (1 can, drained)
- 15 oz. black beans (1 can, drained)
- 1 cup corn (canned or frozen)
- 3/4 cup chopped onion
- 3/4 cup pepper (green, red, yellow or orange, chopped)
- 28 oz. canned tomatoes (2 cans, diced)
- 26 oz. tomato sauce (1 jar)
- 1 cup ketchup (or chili sauce)
- 1 can tomato paste (5 1/2-6 oz)
- 2 cups beef broth
- 1 Tbsp. sugar (brown or white)
- 3 Tbsp. chili powder (2 -, more or less to taste)
- 1 Tbsp. ground cumin
- 2 Tbsp. garlic cloves (minced)
- 1 Tbsp. dried oregano (ground or leaves)
- 1 Tbsp. dried basil (ground or leaves)
- 1 Tbsp. pepper (or cayenne, more or less to taste)
- 1 Tbsp. salt
- 1 can chopped green chilies (4-oz)
- cooking oil spray
- jalapeno (optional garnishes, seeds and membranes removed, minced - if desired, to taste)
- sour cream (optional garnishes, if desired to taste)
- green onions (optional garnishes, thinly sliced, if desired, to taste)
- cheese (optional garnishes, grated or shredded, if desired to taste)
