- 3 hearts of romaine lettuce (core removed)
- 6 slices smoked bacon (200g | 7oz, cut into 1" pieces)
- 2 cups bread (150g | 5.3oz stale, cubed, my favorite is a 2 days old French baguette)
- 1/4 cup grated Parmesan cheese (20g | 0.7oz, plus a few shavings, if desired)
- 3 anchovy fillets (chopped)
- 1 Tbsp. capers
- 1 large egg
- 1 lemon
- 3 cloves garlic (peeled)
- 4 anchovy fillets
- 1 Tbsp. oil (from anchovies)
- 1 Tbsp. Dijon mustard
- 1 Tbsp. capers
- 1 Tbsp. caper brine
- 1/2 tsp. salt (I use Himalayan salt)
- 1/4 tsp. ground white pepper
- 1/2 cup extra light tasting olive oil (or avocado oil)
- 1/4 cup grated Parmesan cheese (20g | 0.7oz)
