- 1 cauliflower (grated or placed in a blender until a rice consistency **)

- 1 bowl vegetables (your choosing. I chose just sweetcorn and mushrooms)
- 1 bunch spring onions (chopped)
- 1/2 cucumber (diced)
- 1 handful fresh coriander
