Tasty enough but the faff of roasting the aubergine and pepper first wasn't really worth it. Would have helped if it had mentioned the tomatoes were a tin of rather than the 600g of actual tomatoes I bought before I realised

Lovely recipe, will make again.
A bit of effort to roast the veg first but totally worth it in the end.
