- 12 shiitake mushrooms
- 1/2 cup hot water
- 2 bunches vegetables (bok choy, chinese brocolli..etc – cut into two inches length crosswise)
- 2 Tbsp. rice bran oil (or other oil)
- 8 cloves garlic (finely diced)
- 7 oz. noodles (dried wheat, such as wide lo mein noodles)
- water (enough to cook the noodles)
- 3 Tbsp. light soy sauce
- 1 Tbsp. caramel sauce (thick)
- salt (to taste)
- white pepper (to taste)
- 1 pinch sugar
- 2 Tbsp. garlic oil
- 2 Tbsp. oyster sauce
- 2 Tbsp. caramel sauce (thick)
- 1/2 Tbsp. sesame oil
- 2 Tbsp. light soy sauce (depending if noodles contain salt)
- salt
- white pepper
- 5 sprigs cilantro (finely chopped)
- 2 stalks green onion (finely sliced)
- 1 Tbsp. fried shallots
- 1 Tbsp. fried anchovies
- 2 red chilies (cut lengthwise and deseed. Then thinly sliced crosswise.)
- 1 Tbsp. light soy sauce
