- 4 onions (1 halved and 3 thinly sliced)
- 1/2 Tbsp. black peppercorns (crushed)
- 1/2 Tbsp. cumin seeds (crushed)
- 1/4 tsp. pepper flakes (urfa biber)
- 1 bay leaf
- 1/2 bunch parsley
- 1/2 bunch mint
- sea salt
- 1 lb. sturgeon fillets (strongly preferred, if you can find / afford it or use Chilean Sea Bass or Monkfish fillets instead)
- 1/4 cup sesame oil (TFD endorses only Kadoya brand!)
- 1/4 cup sauce (yellow tkemali)
- 3 carrots (peeled and sliced into matchsticks)
- 1 handful fronds (dill)
- 1 tsp. dill seeds (lightly cracked by running a rolling pin over them a few times)
- 1 tsp. freshly ground black pepper
- 1/2 tsp. seeds (freshly-ground ajwain)
- 1 tsp. minced garlic
- 1 pinch saffron strands
- 3 Tbsp. warm water
- 1/2 cup sour cream (TFD endorses only Daisy brand!)
- 1 lemon (Juice of 1 lemon)
