- 4 lb. crawfish (whole and preferably live, rinsed well with fresh water if frozen or left to purge in fresh water for 1 hour if alive)
- 10 cloves garlic (peel the skin and lightly pound)
- 5 sprigs cilantro
- 5 slices fresh ginger
- 4 green onions (cut into 2 –inch segments)
- 2 Tbsp. soy sauce
- 2 cups chicken stock
- 2 Tbsp. Shaoxing rice wine
- 30 red chilies (dried, Chiles de Arbol work well here if you cannot find the right Chinese dried chiles)
- 1/3 cup Sichuan peppercorns
- 3 bay leaves
- 1 tsp. chicken bouillon powder
- 1 tsp. five spice powder
- 1 Tbsp. sugar
- 1/2 tsp. sesame oil
- 1 Tbsp. Sichuan peppercorn oil
- 1/4 cup peanut oil
