- 180 grams white beans (dry small, soaked in water overnight)
- 1 pinch baking soda
- 1 tsp. salt
- 3 bay leaves (one for each pot of bean cooking)
- chicken stock (for last soaking of beans)
- 1 red pepper (large)
- 1 medium onion
- 3 celery stalks (large leafy, de-stringed, reserve the leaves separately - chop the leaves first)
- 1 parsley root (peeled, you can use a parsnip or more carrots instead, but TFD strongly recommends seeking this out!)
- 2 carrots (small peeled)
- 4 garlic cloves (finely chopped)
- 1 Tbsp. butter
- 1 1/2 Tbsp. flour
- 1 Tbsp. tomato paste
- 1 1/2 tsp. salt
- 1 1/2 tsp. Hungarian paprika (hot)
- 1 1/2 tsp. spanish paprika (smoked)
- 3 garlic cloves (small, crushed)
- 3 tsp. white wine vinegar
- chili flakes (A sprinkling of smoked, to taste)
- 10 tarragon leaves (chopped)
- 3 Tbsp. chopped parsley
- 2 Tbsp. dill (chopped)
- 1 Tbsp. lovage (finely-ground dried, optional but recommended)
- 1 kielbasa (Hillshire Farm Polish, link, cut up and fried in a pan)
- red onion (finely chopped, mixed with a little white wine vinegar or zeamă de varză acră (sauerkraut juice - this is very much preferred over vinegar) and salt)
- sour cream
- seeded bread (Light country/, not sliced - before serving, put it, or a portion in a low oven and bake until crisp on the outside)
- sour pickles
