- 1/3 cup butternut squash (minced)
- 1 Tbsp. lamb (minced fat)
- 1/2 cup minced onions
- 1 carrot (small cooked, minced)
- 1 tsp. cumin seeds (roughly ground in a spice grinder)
- 1/2 tsp. salt (each of, pepper, and sugar)
- 1 Tbsp. sesame seeds
- 1 tsp. fresh cilantro (minced)
- 1/4 tsp. vegetable oil
- 3/4 tsp. chili oil (I prefer Kadoya-Brand Hot Chili Sesame Oil)
- 1 tsp. cumin seed
- 1 tsp. fennel seed
- 1 tsp. Sichuan peppercorns
- 1/2 tsp. black peppercorn
- 2 scallions (minced)
- 3 inches ginger (piece of, minced, ~2 TBL)
- 4 large garlic cloves (minced)
- 1 tsp. rock sugar (pulverized golden, or use light brown sugar instead)
- 1/4 cup chicken stock (preferably homemade or use low-salt canned)
- 1/8 cup chili paste (Guilin-style, or use whatever Chinese chili paste you prefer)
- 1/4 cup tamari reduced sodium soy sauce
- 1/3 cup black vinegar (Chinese Sweetened, or use Balsamic)
