- 1 cup water (/ 250 ml)
- 2 ginger root (large, ideally, use Young Ginger)
- 1 cup rice vinegar
- 7 Tbsp. sugar (5-)
- 1 tsp. salt
- 5 tsp. sake
- 3 Tbsp. mirin
- 2 inches dried kombu (piece, giant kelp)
- 1 1/4 cups Japanese soy sauce (top-quality)
- 1 handful dried bonito flakes (small, katsuobushi)
