- 1 medium onion (chopped)
- 1 carrot (large peeled, chopped)
- 1 Tbsp. kosher salt (plus 1 teaspoon ,additional for seasoning meat)
- 1 bunch celery leaves
- 1 bunch fresh thyme
- 1 bunch fresh parsley
- 2 cups onions (peeled and roughly chopped)

- 1/3 cup dark brown sugar (packed)
