- 12 cherrystone clams (or littleneck)
- 4 Tbsp. unsalted butter
- 2 tsp. thyme (finely minced, flowers, preferred or fresh thyme leaves)
- 2 cloves garlic (pressed or finely minced)
- 2 Tbsp. roasted red pepper (finely minced)
- 1 Tbsp. jalapeños (finely minced)
- 1 1/2 Tbsp. shallot (finely minced)
- 2 1/2 Tbsp. dry white wine (or vermouth, highly preferred, I use Noilly Prat brand from France)
- 2 1/2 Tbsp. fresh breadcrumbs (coarse)
- 3 Tbsp. leaf parsley (finely chopped fresh flat-)
- worcestershire sauce (Good splash)
- freshly ground black pepper
- 3 slices bacon
- 1/4 cup parmigiano (finely grated, Reggiano)
- unsalted butter (Additional softened)
- lemon wedges (for serving)
- Tabasco

This was great, even though I didn’t have the called for Vermouth, and used white wine. I also used Prosciutto in place of the bacon.
