- 5 lb. mussels (cleaned black, preferably from Prince Edward Island)
- 3 oz. sweet butter (divided)
- 8 oz. leeks (white and light green part only, well-rinsed and chopped)
- 5 oz. carrots (peeled, chopped)
- 5 oz. celery root (peeled, cut into small pieces)
- 5 oz. sweet onion (such as Maui or Walla Walla, chopped)
- 4 oz. shallots (sliced into rings)
- 750 mL dry white wine (TFD prefers Gewürztraminer)
- 1 pinch cayenne pepper
- 1 pinch Espelette pepper
- seasoning (A large pinch of Yemenite Hawaij, TFD change - optional but strongly recommended)
- sea salt
- ground white pepper
- 5 parsley
- 8 black peppercorns
- 1 sprig fresh thyme
- 1 bay leaf
- 2 egg yolks
- minced chives (for garnish, optional)
