- 1 garlic clove (halved, for cooking marrow separately)
- 1 lb. oxtail (cut into pieces)
- 6 qt. water (or more as needed to cover)
- 3 Tbsp. kosher salt
- 18 black peppercorns
- 1 Tbsp. mustard seeds
- 10 juniper berries
- 3 bay leaves
- 1 handful parsley (stems, tied together with kitchen string)
- 1 garlic (big clove, gently crushed)
- 1/4 lb. carrots (garden, scrubbed and whole or peeled and thickly sliced)
- 1/4 lb. parsnip (parsley root and yellow turnip in equal amounts, or more carrots)
- 1/4 lb. celery root (well-peeled and cut into chunks)
- 1/4 lb. leeks
- 1 bunch chives (tied together with kitchen string)
