- 1/2 Tbsp. coriander seeds
- 3 candlenuts (or Macadamia or cashew nuts)
- 1/4 black peppercorns
- 1/4 white peppercorns
- 1 pinch freshly grated nutmeg
- 2 cloves
- 1 pinch cumin seeds
- 1/8 tsp. sesame seeds
- 1 tsp. belacan (or shrimp paste, sauteed over medium-high heat with some oil. If you’re vegan, you can substitute oyster or mushroom sauce)
- 3/4 tsp. palm sugar
- 1/4 tsp. salt
- 1/2 lime (juice only)
- 1/2 stalk lemongrass (smashed with the back of a knife until pliable)
- 1 curry leaf (or bay)
- 75 coconut oil
- vegetable oil (for shallow frying)
- 375 grams shallots (/13¼oz, peeled, thinly sliced)

- 300 grams long grain rice (/10½oz)
- 520 mL coconut water (18¾fl)
- 1/2 lb. green beans (trimmed, cut into 2.5cm/1in pieces)
- 20 grams garlic (/¾oz, peeled, finely chopped)
- 2 red chilis (medium-hot, seeds removed, finely chopped)
- 1 Bird's eye chili (thinly sliced)
- 1 medium carrot (peeled, thinly sliced)
- 1 Tbsp. tomato purée

- 250 grams shrimp (/9oz small cooked cocktail)
- 1 Tbsp. light soy sauce (tbsp)
- 8 scallions (trimmed, thinly sliced)
