- 8 cups cucumbers (sliced into or spears, look for smaller “pickling cukes”)
- 1 cup onion (or 1 cup other vegetables, such as green onions, green beans, or peppers, cut into similarly-sized peices. Always use fresh, high-quality vegetables.)
- 2 Tbsp. flavoring (per jar—this is largely up to personal preference and culinary creativity, but a classic mix of fresh garlic, fresh dill or dried dill seed, and red crushed pepper is a great start)
- 3 cups white vinegar (5 percent acetic acid)
- 3 cups water
- 2 Tbsp. sugar
- 3 Tbsp. pickling salt (canning/, available at most grocery stores next to the regular salt)
