- 3 pumpkins (small, or Squash, I used Golden Nugget Squash for it’s sweet and smooth insides)
- 5 eggs (*4 whole eggs and one egg white)
- 1 purple onion (large, sliced)
- 4 mushrooms (sliced)
- 1 Tbsp. butter (or Coconut Oil)
- 1/4 cup grated Parmesan (or Asiago Cheese, or both)
- 2 Tbsp. coconut flour
- 1/4 cup coconut cream (Set a can of coconut milk in the fridge, scoop out the hardened portion.)
