Light and fluffy! I had to make a substitute buttermilk with milk and vinegar. Will definitely make this again.

My 3 year old loves muffins and I wanted him to have a healthier option other than the boxed store ones.... needless to say he loves these!!

This is the best zucchini recipe I've found. Sooooooo good!! Did 3/4 cup sugar and swapped out 1 cup of flour for 1/2 cup ground flax seed and 1/2 cup oats. But as the blog post says, they're not oily or bland
