- 1 cup red lentils
- 2 cups low sodium vegetable broth
- 48 oz. fire roasted tomatoes
- 1 Tbsp. oregano
- 3 Tbsp. fresh rosemary (or 1 Tablespoon dry rosemary)
- 1 Tbsp. fresh thyme (or 1 teaspoon dry thyme)
- 1 Tbsp. fresh basil (chopped)
- 25 Kalamata olives (chopped)
- 1 Tbsp. minced garlic
- 1 large eggplant (sliced into 1/8 inch thick slices)
- 2 orange bell peppers (or red, yellow, diced)
- 1 cup kale (chopped)
- 8 lasagna noodles (green lentil)
- 2 1/2 cups hummus (I like to use the low-calorie Cedar's Garlic Lovers Hummus or homemade)
- 3/4 cup water (for mixing with hummus)
- 1/2 cup water
- 10 cherry tomatoes (halved)
- 10 Kalamata olives (halved)
- 1 Tbsp. fresh basil (chiffonad)
