- 3 Tbsp. olive oil
- 1 large yellow onion (diced)
- 6 garlic cloves (chopped finely)
- 2 jalapenos (diced, remove membranes & seeds for less heat)
- 2 Tbsp. tomato paste
- 4 Tbsp. chili powder (homemade, recipe below, or store-bought ancho chili powder*)
- 1 Tbsp. ground cumin
- 1 1/2 tsp. smoked paprika
- 1 Tbsp. Mexican oregano (or 2 teaspoons regular oregano or marjoram**)
- 3/4 cup dry red wine (such as Malbec, Syrah or Pinot Noir)
- 2 cups vegetable broth
- 30 oz. pinto beans
- 15 oz. navy beans (or other small white beans)
- 2 Tbsp. cocoa powder (I prefer Dutch process cocoa powder)
- 2 bay leaves
- 1 1/2 Tbsp. tamari sauce (if you have vegan Worcestershire sauce, you can use that)
- 2 chipotle peppers in adobo (chop the peppers + measure out 1 tablespoon adobo sauce**)
- 28 oz. whole peeled tomatoes (crushed by hand, include juices)
- 1 1/2 tsp. kosher salt (plus more as needed)
- freshly cracked black pepper (to taste)
- 1 Tbsp. pure maple syrup (plus more to finish as needed***)
- 1 1/2 Tbsp. freshly squeezed lime juice
- 1 tsp. red wine vinegar (or apple cider vinegar)
- 3 Tbsp. masa harina (Mexican corn flour, optional)
- 1 cup cilantro leaves (and tender stems, chopped)
- 4 ancho peppers
- 4 peppers (guajillo)
- 5 chiles de arbol
- 2 Tbsp. cumin seeds
- 1/2 Tbsp. coriander seeds (optional)
- 1 Tbsp. Mexican oregano (or 2 teaspoons regular oregano or marjoram)
- 2 tsp. garlic powder (or granulated garlic)
- 2 tsp. onion powder (or granulated onion)
- 1 tsp. smoked paprika
- 1/4 tsp. ground cinnamon
