I absolutely loved this but next time I would use slighlty less coconut milk. It diluted the other subtle flavors like lemongrass and the lime.

This recipe is delicious. I always add double the curry paste, but that's my taste. I use this recipe as a base and add other soup ingredients. Tonight I made it with leftover turkey, red peppers, red onion, and okra. It's the base that makes this soup.

This has always been one of my favorites and who knew it could be so easy! I subbed chicken for shrimp plus I left my lemongrass in 1” pieces so they could be removed before eating since they can be a little fibrous. I also added chopped green cabbage which is what my local Thai restaurant does. It isn’t very spicy but I’ll just add Sriracha to taste...I’ll def make again!

A goto dish, over and over and over again. High grade cooking oils, such as Lemongrass Oil and Lime (from Young Living), can be used if you don't have lemongrass stalks or limes.

We use cut up chicken thighs instead of shrimp. Generally add more red curry paste. And because we like this soup on the tart side, add extra lime juice. Yum!

Turned out reasonably well, not as smooth and creamy as I hoped. The second time I used full cream coconut cream and the result was better. The soup was amazing the day after too.

This really is the best! I had to sub curry powder for paste, lemon juice for lemongrass, bokchoy for shrimp & vegtable broth for chicken broth and it was still the best!

This was great- we all loved it including my kids! I added some fresh chopped sweet peppers right at the end (so they still had some crunch). The only other thing I changed was I used 1 can of coconut milk instead of 3. Thanks for the great recipe.

absolutely delicious! perfect the way it is. Doesn't need to be modified in my opinion. I will definitly make again.
