I tried the original recipe and it's really good. Decided to make a double recipe. Works ok with half the butter and vanilla. Added cardamom, salt, ACV and Xantham gum to the recipe.
Double banana bread recipe (modified from original)
548 g bananas (4 medium sized)
100g honey
20ml vanilla extract
100g butter, melted (works ok room temp, just have to make sure it's incorporated well)
120g unsweetened applesauce
8 egg yolks
8 egg whites (whisked into meringue for structure)
110g coconut flour
110g almond meal
1 tsp of ground cardamom (optional)
2 tsp baking soda
2 tsp salt (13g) (for structure and flavor)
2 tsp apple cider vinegar (optional, reacts with baking soda)
1/2 tsp Xantham gum (optional, to prevent collapsing)
Muffins: Bake in 180C oven for 45 minutes
