- 3/4 cup coconut sugar (or dehydrated cane sugar)
- 1 egg
- 1 egg yolk
- 1 1/2 tsp. vanilla extract
- 1 tsp. baking soda
- 1/4 tsp. salt
- 4 oz. dark chocolate (coarsely chopped, I recommend 70-85% the actual cookie is fairly sweet so a darker chocolate contrasts best or chocolate chips)
