- 1 1/2 cups carrots (+ 1 tablespoon, finely shredded - about 3 to 4 large carrots, see notes)
- 1 1/2 cups all purpose gluten free flour blend (+ 2 Tablespoons, I used Bob's Red Mill Gluten Free 1 to 1 Baking Flour)
- 1 1/2 cups blanched almond flour (+ 1 tablespoon, not almond meal)
- 1/2 tsp. salt
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1 Tbsp. canela (+ 1 teaspoon)
- 1 tsp. ground ginger
- 1/4 tsp. ground allspice
- 1/4 tsp. nutmeg
- 3 eggs (room temperature)
- 1/2 cup coconut sugar (+ 1 tablespoon)
- 1/3 cup coconut oil (melted)
- 3/4 cup pure maple syrup (or honey)
- 3/4 cup unsweetened applesauce
- 3/4 cup crushed pineapple (+ 1 tablespoon, canned, drained)
- 2 tsp. pure vanilla extract
- 1 3/4 cups milk (I used unsweetened almond milk, but any kind will work)
- 2/3 cup golden raisins (can swap for chopped walnuts or pecans, if you prefer, optional)
