- 1/2 tsp. baking powder
- 1/2 tsp. kosher salt
- 3 Tbsp. dark soy sauce
- 2 Tbsp. Shaoxing wine (see note)
- 2 Tbsp. Chinese rice vinegar (or distilled white vinegar)
- 3 Tbsp. store bought low sodium chicken stock (or homemade)
- 5 Tbsp. sugar
- 2 tsp. sesame seed oil (roasted)
- 1 Tbsp. corn starch
- 2 tsp. peanut (vegetable, or canola oil)
- 2 tsp. minced garlic (about 2 medium cloves)
- 2 tsp. minced fresh ginger (about one 1-inch piece)
- 2 tsp. scallion (minced, bottoms, about 1 scallion)
- 2 Tbsp. toasted sesame seeds
- 2 qt. peanut (canola, or vegetable oil for deep frying)

OMG I probably will only do this recipe ONCE a year if that, way too many steps and when juggling two kids under two its just TOO MUCH! Too many ingredients, too many steps and since I am a bit of a novice I set the fire alarm off, ugh, that much oil in a wok is just too much! I also didn't have enough of the dry mixture to coat all the chicken, not sure if I cut the pieces too small or if I didn't make my mixture into the right size "mealy clumps"! Needless to say my husband loved it, but in my opinion to keep my kitchen sanity, I am just going to order from my fav Chinese restaurant!
