- 4 cups cooked chicken (diced, preferably breast meat, optional, my family does not include)
- 2 cups grated Parmesan cheese (freshly)
- sea salt (to taste)
- 12 lb. chicken
- 2 pkg. soup bones (beef, if you can get them)
- 8 lb. beef roast
- 6 carrots (cut in 3’s)
- 2 onion (large, cut in 1/4’s)
- 6 celery stalks (with leaves, cut into thirds)
- 1/2 bunch Italian parsley (chopped)
- salt
